Why Do You Need Sour Cream In Cheesecake

Sour cream: Most cheesecake recipes use either heavy cream or sour cream either will do the job of softening the texture of the cheese and adding some moisture. I prefer sour cream because I like the extra hit of sour tang it adds to the cake. I also add an extra yolk, which enhances the cakes velvety texture.

Make Cheesecake Ahead Of Time

There is really no other way to make a cheesecake, unless you plan to work on it all day. You can bake the cheesecake one day and then store it in the refrigerator for 1-2 days. When youre ready to frost and serve it, prepare the frosting and frost.

You can also prepare the cheesecake completely a day or two ahead of time and store it in the refrigerator. Just do NOT add frosting or decorations or they will be flat, soften, and/or be soggy. Make sure to cover it air-tight!

Another reason I dont usually frost and decorate until Im ready to serve is that its harder to store frosted cheesecake and keep it night and pretty.

How To Know When Your Cheesecake Is Done Baking

The Best New York

When finished baking, the outer ring of your cheesecake should look slightly puffed and set, but the inner circle should still jiggle just a little bit, like Jell-O after it has set.

  • Underdone cheesecake: Continue baking if the outer ring is still jiggly or if the middle ring gives you more of a wobbly slosh than a jiggle. Continue to bake and check the cheesecake every five minutes or so.
  • Over-baked cheesecake: If the center starts to look puffed or if you start to notice cracks, immediately move on to the next step of cooling the cheesecake. Some golden spots or small cracks won’t affect the flavor of your cheesecake.

New York-Style Cheesecake – Everyday Food with Sarah Carey
  • Avoid over mixing your cheesecake filling as that can create air bubbles and cause cracks when baking as the air tries to escape.
  • Similar to preparing macarons, give your cheesecake pan a quick tap on your countertop to pop any air bubbles that may have formed.
  • Do not open the oven door before your cheesecake is ready. The cool air from your kitchen will enter the stove and cause the cheesecake to bake unevenly.

What Is The Difference Between New York Cheesecake And Regular

Not all cheesecakes are created equal. Some are no bake, some are creamier, some are denser, some are loaded with mix-ins, and some are intentionally burnt. OK that last one is pretty uniquecheck out my Basque Burnt Cheesecake to see what I mean!

But for a New York style cheesecake, it has a couple characteristics that make it a stand-out cheesecake. One major sign of a good New York cheesecake is the texture. Its dense, rich and heavy which is why its tough to have more than one slice.

The reason why its so rich is due to the amount of cream cheese used in the cheesecake. Regular cheesecake relies on heavy cream and sour cream to thin the batter and create a silkier, creamier texture. New York cheesecake is heavy on the cream cheese which is why its so dense and rich.

Extra cream cheese isnt the only thing that makes New York cheesecake so special. It also includes extra eggs and egg yolks to provide and smooth consistency. The egg also helps to bind together the cheesecake, giving it that tight texture.

New York style cheesecake is also always baked and contains very simple ingredients. Its a no-frills cheesecake that packs a punch in flavor and texture. The distinct flavor can be attributed to the bit of sour cream and fresh lemon juice, giving it a slight tang.

What Is A New York Cheesecake

New York cheesecake is made using cream cheese, heavy or light cream , eggs, and sugar. Some recipes call for flour to be added as well, but this ingredient is not included in every recipe. The cake’s crust consists of crushed graham crackers with melted butter instead of lower-fat options like cookies or biscuits.

What Is The Difference Between New York Style Cheesecake And Regular Cheesecake

The differences between cheesecakes are subtle, but they’re there if you know what you’re looking for.

New York Style

The most distinct feature of a New York Style cheesecake is simply the amount of cream cheese in the recipe a lot. New York Style Cheesecake is extremely rich and dense made with cream cheese, heavy cream, and oftentimes egg yolks in addition to the eggs. It’s typically not baked in a water bath and begins baking at a higher temperature for a short amount of time before it’s brought down to a lower temperature for the remainder of the bake time. This gives the cake a rich and cream interior with its signature golden brown top.

I used a graham cracker crust in my NY Cheesecake, but apparently the traditional New York crust is more cake-like.

Regular Cheesecake

This recipe uses sour cream instead of heavy cream, is typically baked in a water bath to prevent cracking on top, and has a graham cracker crust. It has a lighter taste and texture than NY Style.

Italian Cheesecake

There are some similarities between this cheesecake and the New York Style cheesecake. However, the differences are notable in the fact that Italian cheesecake incorporates ricotta cheese into the filling. It also normally has no crust at all or a sugar cookie-type crust.

I made this Ricotta Cheesecake several years ago, and it sounds like it fits the description pretty well. It’s absolutely delicious!

Whats The Difference Between Ny Cheesecake And Classic Cheesecake

The primary difference between a New York-Style Cheesecake and other cheesecakes is how dense and rich it is. Its stick-to-the-roof-of-your-mouth thick and creamy and my gosh, its so good!

There are a few differences between my Classic Cheesecake and this one, which gives this one its signature texture. First, this New York style cheesecake uses more cream cheese. As a result, theres also a little more sugar to balance out that extra cream cheese.

This New York cheesecake also uses heavy cream instead of sour cream to make it a bit firmer and denser. Extra eggs and the addition of egg yolks contribute to this cheesecakes denser texture as well and help bind everything together. They also add flavor particularly the egg yolks. Finally, I like to add a touch of lemon zest to my New York cheesecake for added flavor! That little touch of lemon really takes the flavor of this cheesecake over the top!

What To Do If Your Cheesecake Cracks

New York-Style Cheesecake | Cooking with Kurt

Cracks that show up as soon as the cheesecake is done are a sign that your cheesecake is a bit over-baked or that you skipped the water bath. Cracks that show up after cooling are a sign that your cheesecake cooled a little too quickly.

But cracks aren’t a sign of failure, nor do they mean that your cheesecake won’t taste good. They’re mostly cosmetic. Covering the surface of the cheesecake with sour cream or another topping will do a fine job of hiding them.

A Comprehensive Guide To Different Types Of Cheesecake

When you think cheesecake, theres a good chance you picture some platonic ideal of a creamy, smooth, ivory dessert. But there are actually several different types of cheesecake, and while some would be content to lump them into New York cheesecake and everything else, we like to get more detailed.

Cheesecake is fantastic in all its many forms, for sure, but the fact that there are so many can be a little trickyjust saying cheesecake doesnt tell you exactly what youre going to get. A silky-smooth, rich, cream cheese-based dessert is most likely, but even then, the specifics can vary. What kind of crust will it have, if any? What kind of topping? What makes it a New York cheesecake? And what is Japanese style cheesecake? Rest assured, weve got answers!

Below, a breakdown of the most common cheesecake types in all their glory.

How I Adapted Dorie Greenspan’s Recipe

My young friend Audrey and I worked together on this cheesecake and have made some slight changes to Dorie’s base recipe. We’ve thickened the graham cracker crust on the bottom and don’t let it ride up the sides. We also top the cake with a creamy sour cream topping and serve it with a tangy bright raspberry sauce.

Many thanks to Dorie for graciously allowing us to share her recipe with you!

How To Freeze Cheesecake

This is another question that I get about every cheesecake and freezing cheesecake is actually very easy.

You can freeze cheesecake right on the bottom of the springform pan or you can take it off the pan and transfer it onto an aluminum foil covered cardboard.

Once cheesecake has been cooled to room temperature, run a butter knife along the inside of the springform pan to separate the cheesecake from the pan. Place the pan with cheesecake in the freezer and freeze for about an hour.

Then, carefully take off the side portion of the springform. At this point, you can either keep the bottom of the springform with the cheesecake or transfer it onto a piece of thick cardboard cake holder covered with aluminum foil.

Wrap cheesecake and the bottom of the pan with plastic wrap, in 2-3 layers. Then, wrap the whole thing with aluminum foil. As an added protection from air, you can place the whole things in a large, zip-lock freezer bag, but that not necessary.

Make sure to date and label before placing cheesecake back in the freezer.

Cheesecake will keep in the freezer for 2-3 months.

To thaw frozen cheesecake, make sure to do it slowly. Place cheesecake from freezer into the refrigerator and slow-thaw overnight.

No matter which cheesecake you are trying to freeze, make sure to freeze it WITHOUT topping or frosting. Toppings and frostings can be added after the cheesecake has been thawed.

New York Cheesecake Baking Tips

New York Cheesecake!

Patience is key when baking a cheesecake. Both the preparation, mixing, and baking are taken slow and steady. If you ever struggle with baking ANY cheesecake, not just this New York cheesecake recipe, youll find these tips very useful!

  • Cream Cheese Use high quality and full fat cream cheese because you can definitely tell a difference in taste and texture. I prefer Philadelphia full fat cream cheese bricks because they always leave me with a super rich and creamy cheesecake.
  • Room Temperature Any ingredient that needs to be refrigerated should be brought up to room temperature before you start. If you mix cold ingredients with room temperature ingredients, it can shock the batter and create lumps. Its also much easier to mix in ingredients when theyre at room temperature, preventing any over mixing.
  • Slow & Steady When using an electric mixer, always run it on the lowest speed possible so you dont whip any air into the batter. If you have tiny air bubbles all throughout the batter, heat will force steam out of those bubbles and the only way out is through the surface. This is one reason why you cheesecake may crack.
  • Following these 5 steps will not only help you with this New York cheesecake recipe, but any cheesecake recipe. Just remember to keep everything low and slow, bring your ingredients to room temperature, and ALWAYS use a water bath.
