Fuhgeddaboudit: The Local Favorite Goes Mainstream
In 1949, Charles W. Lubin founded Sara Lee and, seizing on the new frozen-foods technology, began to ship New York-style cheesecakes to the lower 48. Soon enough, the New York cheesecake began to lose its Broadway glamour. Frozen cheesecakes joined the ranks of TV dinners and Jell-O salads — food for busy suburban housewives and their families. New York was changing, too. Post-war, refugee Jews were assimilating, losing their accents, moving uptown. As the delis where theyd felt at home began to disappear, the popularity and ubiquity of the New York cheesecake disappeared with them. New York cheesecake, having lost its panache, began its second life as a throwback, a slice of nostalgia — the sort of thing served in middling suburban steakhouses, looking beige and slightly wet beneath a squirt of raspberry puree. But here in New York, the New York cheesecake never really went away. While most of our Jewish delis have closed, some of the holdouts are still slinging slices that would make Sinatra sing.
Ferrara In Little Italy 8 Stars
Appearance 1, Flavor 2, Customer Service 2, Price 2, Lovability 1
Typically I go to Ferrara’s after having dinner at Angelo’s and it’s a great ending to a delicious evening. This day as no exception, delicious Italian dinner at Angelo’s and then dessert at Ferrara. I usually order some kind of gelato but to stick with the cheesecake adventure, I ordered a slice of plain cheesecake. I wasn’t able to eat it fresh out of the kitchen because we ordered our cake to go have you ever tried to eat cake and walk? I can’t even chew gum and walk! So I waited until we got back to the hotel. It was good even hours later and filled my dreams with tasty goodness. There was nothing wrong with this cheesecake, but there wasn’t anything special about it either. Just good cake served by nice people. Compared to Junior’s, this slice was a bit small. I know, I don’t need the huge slices, but we’re comparing here.
Funny story I have zero photos of my cheesecake from Ferrara. I took a number of other yummy photos, but apparently I was so excited to grab this slice and go, I forgot to take a photo. So, please enjoy these tasty photos of fruit tarts and other scrumptious desserts from Ferrara now imagine the cheesecake!
What Is The Difference Between New York And Philadelphia Cheesecake
When most people refer to Philadelphia-style cheesecake, experts say, theyre talking about a version marketed by the cream cheese brand. New York style typically has sour cream or heavy cream in the mix. Philadelphia style doesnt. Which means it doesnt have anything to do with Philadelphia, the city.

Lindy’s In Time’s Square 4 Stars
I really wanted to love Lindy’s cheesecake. Lindy’s is known for their cake and I walked in with high hopes. However, we sat in our booth for about 30 minutes, repeatedly ignored before I ever got a taste. Then, I paid $10 for an average piece of cheesecake. I don’t think it tasted as good as the previous two slices, mostly because the customer services was so bad, I literally had a bad taste in my mouth. We ordered the cake to go because it took so long for someone to take our order, we didn’t want to sit there an eat anymore. Once we got our order we headed down to 54th and 6th and grabbed a couple plates of street meat now THAT was delicious!

What Youll Need To Make New York Cheesecake
Before we get to the recipe, youll need a nine or ten-inch springform pan and 18-inch heavy-duty aluminum foil. The springform pan features sides that can be removed from the base, so you can release the cheesecake easily without having to flip the whole pan over .
Springform pans, however, are notorious for leaking. Since a cheesecake bakes in a water bath, the foil prevents the water from seeping in during baking. Please do not attempt to use standard 12-inch aluminum foil you cant have any foil seams on the bottom or sides of the pan. I can tell you from experience that no matter how well you wrap the pan, if there are seams exposed to the water, the water will find a way in.
If youd like to try another technique that doesnt require wrapping the pan in foil, youll find some guidance here.

Where To Get The Best Slice Of Old New York Cheesecake In Nyc Today
Sarges, the citys only 24-hour Jewish delicatessen, serves up a New York cheesecake the way Harpo would have ordered it.
An entire Sarges cheesecake — based on a secret family recipe — weighs over seven-and-a-half pounds, or about the average weight of a newborn baby. A single slice is over three inches high.
Even halved, a slice from Sarges is near-impossible to finish by yourself. Its best eaten plain, the way it used to be, without the gussying-up of a layer of Oreos. The filling is rich and funky and even a little stinky, from the cream cheese. Savory and slightly grainy, its akin to that other Jewish deli classic — a good cheese blintz. Baked until its tender and lightly blonde, with a nearly non-existent crust, your fork slides so easily through the slice thats almost too big to finish.
Our cheesecake is not too dense, its not too light, its got the perfect amount of sweetness, says Steven Thall, the Executive VP of Sarges. Ive never, ever, ever had a person tell me our cheesecake wasnt the best theyve had. And I always tell them to be honest. While Sarges is best-known for its towering sandwiches , Thall thinks the cheesecake is integral to the Jewish deli experience. The New York cheesecake is almost like the black and white cookie or rugelach, he says. These are staples of the Jewish deli history.

1/5We have been a loyal customer now for 10-12 years now and I have to admit that this will probably be one of our last cheesecakes from you. There has been a steady decline in the quality of cheesecake in recent years. Which Is Better Baked Or No Bake Cheesecake
The prime difference between no-bake cheese and baked cheesecake is that the baked one has a better texture. In particular, baked cheesecake has a creamy and smooth texture which is hard to achieve with a no-bake cheesecake recipe. The baked cheesecake tends to be fluffy and moist even if its baked.

How To Make Homemade New York Cheesecake
The crust is easily made with a mixture of cookies, sugar, and melted butter. Its baked for a few minutes before adding the filling so its crisp and not mushy.
Use graham crackers if theyre available, or vanilla wafers or digestive biscuits which are more common in Europe. Even if you use sweet biscuits, dont leave out the sugar because it acts as a glue and gives the crust a firm texture and holds its shape.
The filling is made of cream cheese, sugar, eggs and egg yolk, cornstarch, lemon zest , and heavy cream. If you like cheesecakes with sour cream, you can use sour cream instead of the heavy cream. Ill choose heavy cream over it every single time because of the texture it gives to the cheesecake.
You dont have to use brick-style cream cheese. Cream cheese spread that contains about 30% fat is ok to use. The cheese should have a thick consistency. Low fat cheese is more thin, and if you use it, the cheesecake wont be as rich or dense.
The ingredients are mixed in a mixer in a low-medium speed. The goal is to mix the ingredients well without incorporating too much air into the batter.
Cosmic Diner Off 8th And 51st 7 Stars

The Cosmic Diner was across the street from our hotel so we passed it a few times every day. I’ve never heard of it and I’ve never eaten there, but at the end of day 4 I remembered I hadn’t sampled any cake, so we ran over to the diner to see what they had. It was about 11:30 pm and the owner was right there at the front excited to help us and the place smelled awesome. He said they had been in business for something like 20 some years at this location maybe 5 or so it was late, I don’t remember the exact details, but I was impressed. The Cosmic Diner a variety of desserts in a traditional dessert cabinet right there are the front and the cheesecake looked scrumptious! We ordered a slice and took it back to the hotel.

Days Of New York Cheesecake
I Love Cheesecake and NY style cheesecake is amazing! Yes, there is NY style cheesecake outside of New York, all of which I am usually a huge fan, I’ve even made my own. But nothing compares to real, in person, New York cheesecake. There are a ton of options to try so if you visit NYC there is no shortage of cheesecake to sample. Every restaurant, specialty pastry shop and deli have their own version although I think some are actually just rebranding/packaging cheesecake from other local bakers and I love it all. Recently, I decided since I was going to be in NYC for 5 days, I would try a different cheesecake each day and so I did. Deliciousness every day.
WARNING Food photos ahead if you haven’t eaten, don’t blame me if you want a bite of sugar in a minute. Maybe grab a handful of kale chips and almonds before you continue reading. Please don’t expect mind-blowing, magazine quality photographs that you wish you could lick through your screen. I took photos as I was sampling, and sometimes cheesecake eating time in NYC is well after dark. So just imagine the gloriously delicious photos through my grainy tourist camera lens believe me, it was mostly all tasty in person.
I decided to sample some of the better known brands of cheesecake along with a couple you might not be familiar with. I’m giving every slice a rating from 0-10 with 2 possible points for each of 5 categories: Appearance, Flavor, Price, Customer service and overall Lovability.

Magnolia Bakery In Rockefeller Center 10 Stars

I love love love this Magnolia Bakery cheesecake. I love the creamy flavor, I love the graham crust, I love the unique individual mini cakes vs a traditional slice and I love the atmosphere of the shop. We stopped into two different Magnolia Bakeries during our New York trip and each store was really busy. They are small stores with a great variety, so no matter the size of the line, don’t feel like you need to rush to decide, the staff is super friendly and helpful and happy to get you whatever you need. However, don’t loiter.. get your goodies and go there’s not enough room in the store to just hang out and chat.
This cheesecake has just the right flavor, with I think, yummy specs of vanilla bean you can see. The crust is sweet and crunchy and moist all at once. The individual cake portion is enough to eat some now and save the rest for later, but I didn’t save any for later. I couldn’t help myself I was on vacation! This is a cheesecake I hope to see here in Colorado some time soon.. I’ll be first in line to grab some treats!
Because it’s so delicious and adorable here’s another yummy view for you to enjoy. Magnolia Bakery offers a variety of cheesecake flavors. I think next I’m grabbing a key lime!

What Is New York Cheesecake
New York cheesecake is known for its creamy, satiny texture. Its rich, dense and tall with a flat top exactly how I like my cheesecake. Its made with cream cheese, eggs, egg yolks and heavy cream or sour cream, to add richness and a smooth consistency. Sometimes its flavored with lemon to add freshness.
The cheesecake is not baked in a water bath, but instead, its baked at a high temperature for several minutes, and then at a low temperature to ensure it stays creamy inside.
Some say that you cant eat more than a small slice of this cheesecake because its quite heavy, but not me. Ill take 2 large ones, please!
