How A Family Bakery Makes Brooklyn’s Favorite Conchas

Be the first to get expert restaurant recommendations for every situation right in your inbox.

If restaurant takeout windows were given awards for their service over the last year, Wildair would win for widest range of pastry pop-ups. Once a fancy LES date night spot with an incredible tasting menu, this lower Manhattan pick-up place is now known for its rotating menu of things like plum brioche donuts, fresh churros, olive oil cake, and yuzu sesame cookies. They typically drop new pastries on their website every Wednesday at noon, and pre-orders sell out fast. So if you want one, follow along with Instagram full of bold infographics made with disco fonts youll want to pause and stare at in awe for several minutes.

Leo reigns supreme in all things sourdough. From baguettes and loaves to homemade bagel sandwiches with lox, this Williamsburg spot will give you the tangy carb moment you likely never knew you needed. They even have a weekend-only pastry box you can order online, including a rotating menu of things like sausage rolls, chocolate chip cookies, and plump bomboloni filled with pastry cream. For dessert, Leo offers rotating options like orange olive oil cake with fig and peach jam and salty honey buttercream.

Don Paco Lopez Panaderia

Don Paco Lopez Panaderia is a goldmine of Mexican sweet bread. The family business goes back 3 generations to the state of Puebla in Mexico, and has been one of the best bakeries in Brooklyn since 1991. They provide both the Mexican community and their multicultural neighbors alike with the homestyle flavor of Mexico.

Theres a multitude of options to choose from as far the pan dulce is concerned. If its your first time visiting I suggest the traditional and easily recognizable concha. At Don Pacos they bake it as good as anywhere youll find in NYC, making it airy and fluffy. It has a sweet, sugary topping that crumbles with every bite.

After you try the concha its all fair game. I suggest letting your inner child loose and grabbing anything that looks good. When I was growing up my parents would buy enough pan dulce to have with coffee over the next few days, and I encourage you do the same at this delicious Brooklyn Bakery.

Bakeries in Brooklyn are no joke. From old-school generational Italian bakeries, French bakeries, fusion bakeries to little shops just selling sweet treats and delicious fresh baked bread, our borough is LOADED!

In fact, Brooklyn is a powerhouse for baked goods and bread. From sugar-filled treats to savory loaves of lard bread, the bakeries in Brooklyn are some of the most famous in the world. After all, this is where the famous Brooklyn Blackout Cake originated! This popular dessert combines layers of chocolate pudding, frosting, and cake crumbles to create a delicious dessert.

Brooklyn is also home to the famous Ebingers Bakery, which closed down in 1972. Although this is originally where the blackout cake came from, many bakeries in Brooklyn have followed in their footsteps and created their own recipes.

A fun fact about this bakery in Brooklyn, Ebingers created the Brooklyn Blackout Cake in recognition of the mandatory blackout drills to protect Navy Yard from enemy planes during World War II which employed over 40,000 workers.

Needless to say, the cake was popularized and stuck around even after the war.

The History Of Villabate

For generations the Alaimo family has been creating the finest in Sicilian pastries, cakes, cookies and breads. It all started in the small town of Villabate in the northern region of the island of Sicily where Angelo Alaimo and his son Emanuele started their legacy by baking bread for the locals. After years of working hard in the country they call home, Angelo and Emanuele followed their dreams of bringing the best in Italian baking to the people and brought their talents to America.

In 1979, after years of hard work as simple breadmakers in bakeries all over Brooklyn., Angelo and Emanuele finally reached their goal and opened a place of their own, Villabate of 18th Ave.
